that's funny, in India, basic buttermilk means Yogurt+Water (1 part to 4) in the blender with a pinch of salt.
You can also use lemon instead of vinegar, tastes a bit lighter
buttermilk is the leftover produce from butter produktion if you do it the traditional way, ie making the butter from creamy yoghurt instead of cream.
The liquid left over from butter production is a different product completely from cultured buttermilk, and wouldn't work for pancakes.
is it possible to use skim instead of whole?
