I've always burned pinenuts when I do them in the oven. I need to SEE what is going on. So, I've taken to dry-roasting them in a pan on top of the stove. Non-stick pans are good, but others have worked too cuz the nuts have so much oil inside. Keep your eye on it-- the nuts take ahwile to start to cook, then they'll burn fast if you're not watching them. Keep moving them around with a spoon or spatula.
