
Ingredients:
1 1/3 cups flour
1 1/3 cup sugar
1 cup cocoa
1 cup boiling water
1/3 cup vegetable oil
1/3 cup milk
2 teaspoons vanilla
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
Directions:
Preheat oven to 325. Grease and flour or spray (with cooking spray with flour) a 9 inch springform pan. In a mixing bowl, whisk together, salt, flour, baking soda, baking powder, and cocoa. In a measuring cup or small bowl, whisk together the eggs, the vanilla and the milk. Pour the oil over the dry ingredients and stir until just mixed. Add milk mixture and combine thoroughly. Add boiling water, mix again. Pour into prepared pan and bake 40-45 minutes or until a toothpick inserted into the middle comes out clean. Cool 15 minutes in the pan on a wire rack then release and continue to cool. Ice. Especially good with chocolate cream cheese icing.

ReplyDeleteYour cake sounds lovely! I recently tried making a chocolate birthday cake using melted chocolate (by Lisa Yorkelson) but it came out all wrong. Everyone loved it for its 'subtle flavor' but I didnt think it was chocolate enough. I think I'm going to follow your example and use cocoa-based recipes as they generally deliver the intense chocolate flavor I love. Thanks for the recipe! Can't wait to try it out for the next birthday celebration that comes around.

ReplyDeleteHi from Australia! I have made your cake today and have yet to try it. Very easy!! I didn't have the ingredients for the yummy sounding icing so made a recipe that I had (icing sugar, milk, butter and cocoa). Will let you know what we think after we have tasted it!!!
