Ingredients:
2 pears, diced (about 2 cups, I used Scarlet pears)
1 3/4 cup flour
3/4 cup brown sugar
1/3 cup sour cream (reduced fat is okay)
2 tbsp butter, melted and cooled
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon freshly ground nutmeg
2 inch knob fresh ginger, grated*
2 eggs
Directions:
Preheat oven to 375. Line or grease and flour 12 wells in a standard muffin tin. In a large bowl, mix together sour cream, sugar, eggs and melted butter. Stir in ginger. In a separate bowl, whisk together the spices, baking powder and flour. Add to the wet ingredients and mix thoroughly. Fold in pears. Distribute evenly between the wells. Bake 15-20 minutes or until a toothpick inserted in the center of the center muffin comes out clean. Cool on wire rack.
*I like to grate it right over the bowl when I go to add it, so I don't lose any of the juices or bits of ginger.

I don't think I have had a pear muffin before either. This combination sounds wonderful.
ReplyDeleteOh I love the sound of this I have been meaning to try the combo of rhubarb and ginger recently maybe I will have to add pear to the list.
ReplyDeleteA quick question: Do you peel the pears or leave the skin on?
ReplyDeletePeels on.
ReplyDeleteMmmm, I like the sound of pear muffins, I'll have to give these a try. Great blog by the way:)
ReplyDeleteHow original! The pear and ginger sound like a great combo!
ReplyDeletePear and ginger! What an unusual combination. It sounds wonderful, however. I'll give this a try.
ReplyDeleteCan you use asian pears in this recipe? Do the pears need to be super ripe? This recipe sounds so yummy!
ReplyDeleteI think Asian pears would work fine, and mine were slightly underripe, ripe or just under would be okay too.
ReplyDeleteI have a pear tree in my backyard and we always end up with too many pears! I have several recipes for pear breads/muffins, and I love them all. None call for ginger though, so I'll have to try this one. It sounds divine!
ReplyDeletePears! Now that's something I need to try in a muffin! Great idea!
