Ingredients:
1 1/2 lb red skin potatoes, quartered and sliced*
1 large onion, quartered and sliced
3 slices of bacon, diced
salt
pepper
Directions:
Heat a large skillet. Add the bacon and cook until crispy. Remove the bacon to a paper towel lined plate. Drain all but 2 tablespoons of bacon grease. Return to flame. Add the onions and potato. Cover and cook about 5-8 minutes, remove cover and saute until the potatoes are golden and fork tender. Add the bacon bits back in, sprinkle with salt and pepper and serve hot.
*You can peel them if you want. We always did when I was growing up but I don't bother for the red skin ones.

Mmm I love home fries. I should go make some!
ReplyDeletethanks for sharing that recipe. it looks scrumptious!
ReplyDeleteI love these so much!
ReplyDeleteAny recipe coming via a Granddad is a sure fire winner. Thanks for sharing your memories!
ReplyDeleteOooh, homefries in bacon fat! You've got my mouth watering...
ReplyDeleteMy home fires always end up too hard inside. I started boiling a bit first to get crunchy outside and soft mushy potato inside. These look great!@
ReplyDeleteThat's evil, and now I want to eat that. I have to make those home fries - I haven't had any type of home fries in a good while!
ReplyDeleteOhh, I feel very strongly about fried potatoes. I love them!
ReplyDeleteWe serve these at the restaurant where I work, and people can't get enough of them.
My first time here, hi everyone.
ReplyDeleteThose look really killer, that's a lovely photograph. I've been buying frozen rendered duck fat from my guy at the farmers' market in San Rafael, and cooking home fries in that -- truly amazing! I need to buy some more ducks and start rendering my own though.....
Great site, I'll be back!
MM, perfect comfort food. I could eat these any time of day with ease! I like 'em nice and crispy.
ReplyDeleteThis might be a local thing... Petes Grill on Greenmount Ave does them this way... as did my family.
ReplyDeleteI prefer them this way over the deepfried/shredded versions I've seen before.
I wish I could have those home fries for breakfast this morning. Looks really good.
ReplyDeleteThanks for sharing. Made them myself today and they were great.
ReplyDeleteI love home fries. Thin slices really are key! Ikea does a version with bell peppers in their 99 cent breakfast, so I sliced a red one up and tossed it in. Yummy!
ReplyDeleteyou totally inspired my breakfast today :) Thanks!
ReplyDeleteI used SPAM instead of bacon.
