
Ingredients:
2 cups granulated sugar
1/4 cup butter
1/2 cup milk
3 cups old fashioned oatmeal
3/4 cup smooth peanut butter*
1 teaspoon vanilla
Directions:
Bring sugar, butter, and milk to a full boil, remove from heat, add oatmeal. Stir. Then add vanilla and peanut butter. Stir. Drop by teaspoonfuls on to waxed paper. When cool, pack in single layer in Tupperware or other air-tight container to store.

These look tasty. We make no bakes at my house a lot, but since we're choco/PB fiends, we always add cocoa to ours. Yum!

ReplyDeleteSooo good!!! I ate as much as I dropped! I substituted vanilla almond milk and the cooled cookies are really soft and sticky. I can barely pick them up. Hummmm. Any pointers for next time?
ReplyDeleteJodie: It must be the almond milk..I've never had that happen with regular milk. Is it sweetened? The cookies really aren't supposed to be sticky.

These look really good! I've never tried a no-bake cookie before, and this sounds like a good place to start. You reckon I could substitute the oatmeal with Kellogg's cornflakes?
ReplyDeleteovenhaven: I've never thought of doing that before but I don't see how it wouldn't work. I would wonder if the size and volumn of the corn flakes might work against you though. But if you give it a try, let me know how it turns out.

Rachel~ After the cookies cooled a bit more they were fine. I guess I was too anxious!! I have made these 3 times! Tonight I made them with the almond milk again (it is sweetened so I only used 1 1/4 cup of raw sugar) 1/2 raw almond butter and 1/2 raw peanut butter. What a quick, easy and delicious treat. My students love them. Thank you for sharing!

ReplyDeleteI had forgotten about these. They used to serve them in my school lunch room. Sometimes they were chocolate rather than peanut butter, or maybe both.

ReplyDeleteAnon- I don't see any problem with adding things. I'd keep add-ins at a 1/4-1/3 cup though.
ReplyDeleteI tried your recipe tonight at 10:20. By 10:30 I was done and the kitchen was clean! To answer annonymous regarding add-ins: I only had 2 cups of oatmeal, so I tossed in 1 cup of coconut and 1/2 cup of dried cranberries. I didn't find any changes in texture or anything and they taste super yummy! Thanks, Rachel! 'll definitely check out your recipes again : )

ReplyDeleteI just finished doing a batch for the Christmas holidays. Quick! I did substitute the peanut butter for Organic Almond butter and Organic Cashew butter and those butters worked just as easily as the peanut butter. Delicious! Thanks.
ReplyDeletei just made these! instead of dropping them as individual cookies, i made them into bars. they aren't quite set but i licked the spoon (oops!) and they are delicious!

ReplyDeleteGreat idea~ and by the way, for any Vegans out there or people with dairy issues, you can make this recipe using almond or soy milk and Earth Balance butter spread. Then you can have a none dairy version and tastes just as good.
