Ingredients:
4 oz cream cheese, at room temperature
1 1/2 cups confectioners' sugar
3 tablespoons blackberry juice (made from pressing and sieving 3-4 fresh blackberries)
Directions:
In a large bowl, beat together all ingredients until well blended. Frost on cooled cupcakes or cake.

Oh yum! I love blackberries and this sounds like the perfect topping on a vanilla cake.

ReplyDeleteI've haven't made it with raspberries but you could give it a try. Blackberries are a little more juicy though.
I used this to make puff pastry tarts with a dollop of this frosting and a single blackberry on top, and it was delicious. Thanks so much for this delicious recipe. I'll be sure to use this again!
