
Ingredients
1 large cucumber, peeled (if waxed)and sliced thinly
1/2 red onion, sliced thinly
2 cloves garlic, sliced thinly
3/4 oz fresh dill, chopped finely
dressing:
3/4 cup Greek yogurt
1 tablespoon red wine vinegar
1/2 teaspoon dried dill weed
1/4 teaspoon celery seed
juice 1/2 lemon
salt
white pepper
Directions:
In a small bowl, whisk together the dressing ingredients. Pour the dressing over the remaining ingredients and toss to evenly distribute. Refrigerate until ready to serve.
That sounds like a refreshing light salad ~ I can't wait to try it!

ReplyDeleteI had no idea cucumbers could be waxed! I love them, but it's a shame the price of them has doubled in the UK recently. Looks like a fantastic salad.

ReplyDeleteThis sounds good....A tip for less Juicy cucumbers is to slice and salt them, let them sit over night to draw out the liquid then pat dry before adding dressing. It really makes a great differance!

ReplyDeleteas spring has sprung it's now time for me to make more warm weather dishes. I made this dish tonight as cucumber salad dishes are always a favorite of my wife. My one comment is that the dressing gets watery, as the cucumbers release a lot of moisture after being sliced. I wonder if salting and pressing might keep the dressing a little thicker.

Aaron- Glad you enjoyed it. As I said in the description, it is a thin dressing. I personally prefer it that way- I just use a slotted spoon to serve. Of course if you'd like it thicker, feel free to salt + press.
