
Ingredients:
2 pounds boneless pork ribs
3/4 cup chili sauce (like Heinz)
1/3 cup blueberry jam*
2 tablespoons balsamic vinegar
1 tablespoon mesquite liquid smoke
1 teaspoon thick Worcestershire sauce
1 tablespoon ginger juice
2 teaspoons ground chipotle
1 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon ground jalapeno
1/4 teaspoons salt
1 clove garlic, minced
1 shallot, minced
Directions:
Rub both sides of the pork with the chipotle, salt and pepper. Quickly brown on each side in a nonstick skillet. Place in a (preferably oval) 4 quart slow cooker. In a small bowl, whisk together the remaining ingredients until smooth. Pour over the ribs. Cook for 8 hours.
*I used yummy Spoon NYC jam which is just sugar + blueberries and has really true blueberry flavor.

Wow this sounds really good! It would probably work well on pork butt/shoulder to be made into pulled pork too.

ReplyDeleteActually, the proportions are a little off for really good pulled pork. Luckily I have a lot of pulled pork recipes on the blog basic pulled pork, East Meets Southeast Barbecue Pulled Pork, Smoky Mango Pulled Pork, Blackberry Chipotle Pulled Pork, Island Pineapple Pulled Pork, Calypso Pulled Pork, Ginger Spice Pulled Pork and Pomegranate Pulled Pork.

You could experiment with that but in my experience, this recipe works best in the slow cooker, the proportions are different than I would use in a dutch oven.

ReplyDeleteI'm thinking it would be a great dish to try with fresh blueberries when they are in season -- though you're right about this being a fabulous way to use up all the little odds and ends in my jam collection!
I use jellies quite often with pork; I love the hint of sweet! So excited about your book!
