Ingredients:
2 cups unsalted, roasted peanuts
1 tablespoon olive oil
1 tablespoon sugar
1/2 tablespoon Old Bay
1 1/2 teaspoon cayenne
1 teaspoon chili powder
Directions:
Line two baking sheets with parchment paper. Preheat the oven to 250. Toss all ingredients together. Make sure the nuts are evenly coated. Arrange in a single layer on one of the baking sheets and bake 25-35 minutes, or until the peanuts look mostly dry, stirring every 5 minutes. Remove from the oven and allow to cool on the remaining lined baking sheet.
Tip: Set the oven timer for 5 minutes, stir the nuts. Carefully reach in the oven and tossed them with a spatula then set the timer again until 30 or so minutes were up.

Did you really include 1 1/2 tsp cayenne?? I added 1/2 tsp and it gave a great kick. I don't think I could have handled 1 1/2 tsp...and I love SPICY. With that slight change, I think these are yummy!!
ReplyDeleteI did but we do like spice! And some of it shakes off during cooking/storing.
DeleteWas wondering if you think this might work with almonds and splenda instead of sugar to be used for a low carb diet?
ReplyDeleteIt would be fine with almonds. I do not use fake sugar so I don't know how that would work in this recipe.
