Ingredients:
3/4 cup plain Greek yogurt*, at room temperature
2 cups mashed overripe banana (about 4 bananas)
1 teaspoon vanilla
2 eggs, at room temperature
1 1/3 cup dark brown sugar
1/3 cup finely shredded sweetened coconut
1/2 cup canola oil
3 1/3 cups flour
2 teaspoons baking powder
Pinch salt
Directions:
Preheat oven to 350. Butter and flour or spray with cooking spray with flour one standard loaf pan or one 4-cup mini loaf pans. In a large bowl, beat together all of the wet ingredients. In a small bowl, whisk together dry ingredients. Mix until well combined. Pour into prepared pans and bake for 45-60 minutes. Cool on wire rack for 10 minutes then remove from pan.
*I used 0% because that is all the store had.


I adore banana bread, but I've never added a coconut to it. Sounds interesting.
