My thoughts:
Chicken salad is a classic way to use up leftover chicken but it can be a little boring. I’ve been utterly obsessed with sesame and sesame seeds lately and thought they might be just the thing to perk up my salad. And they were, they transform a simple dish to something totally company worthy. And don’t forget the snow peas! They add a great little crunch and burst of freshness.
OMG that looks amazing!
Sounds wonderful! I love sesame seeds too. I think black sesame seeds might look interesting in this too.
Can I have some?
Looks good Rachel! Love the sesame and pea pods. It’s funny how we get on to something and have to try it numerous ways. I am on a buttermilk thing.
Looks yummy! Thnx for sharig the recipe!

I’m regretting that the last of our roast chicken went into chicken enchiladas not 20 minutes ago. If I’d seen this post first I would have held out a little chicken to make this. Too bad, because this looks like a perfect lunch.
It must be the season for chicken salad. I love chicken salad but it can be a little boring if you don’t spice it up a little. You’re looks great! Take a look at mine when you get a chance: foodisyummy42.blogspot.com/2008/04/curried-chicken-salad.html

I love chicken salad, but I agree that it needs a re-creation. Well done.
I’ve been drooling for days just looking at your chicken salad photo. I think Phase 1 of South Beach Diet does that to me… 😀
I made these today, and OMG, it is SOOOOOO full of flavor!!! I didn’t have celery, so I just used what I have – some green snaps and toasted black sesame seeds and of course a few dashes of sesame oil.
Thank you so much for sharing this recipe! 🙂 I’ll definitely be making this again.
I just made this for lunch today. It was great! Thanks.
