Coconut Cubes

Ingredients:
4 cups confectioners sugar
2 cups unsweetened (dessicated) coconut
14 oz sweetened condensed milk
1 teaspoon vanilla
food coloring

Directions:
Line a 8×8 inch baking pan with parchment paper or lightly spray with cooking spray. Using a mixer, mix all ingredients except the food coloring together until the coconut is evenly distributed. The mixture will be very thick. Divide the mixture in half, press one half into the bottom of the pan. Add food coloring to the remaining coconut and stir to evenly distribute. Press firmly on top of the uncolored coconut in the pan. Refrigerate about 2 hours or until firm before cutting into one inch squares.

My thoughts:

Despite the amount of sugar in the cubes, they don’t taste quite as sweet as you would think, the coconut keeps it from being too over the top. They are sort of a cross between a coconut cream candy and fudge-dense but chewy. A perfect candy for Easter or Passover.

Two tips:
First, please do not use sweetened coconut in this recipe. Secondly, do not reduce the amount of sugar or they will not set up properly.

  6. This is very much like irish potatoes – the recipe i use calls for powdered sugar, coconut, and s/c milk as well. You roll them into balls, and coat with cinnamon. Delicious!

  7. I think this is a really old recipe! I've seen this type of candy before, although in pink & white. I will have to make this after I check my cupboards for dessicated coconut! It looks lovely.

    I think so too, I remember eating something similar when I was little but never seen an actual recipe for it-maybe I don’t know what it is really called?

  13. I used sweetened coconut (sorry!) because I had a ton leftover from a cake, but put in 1 1/2 small limes worth of lime juice to cut the sweetness. Fragrant and tasty, i can’t stop licking my fingers. They seem to be setting up ok despite the extra liquid.
