Strawberry Rhubarb Quinoa Porridge

Ingredients:
1/2 cup tricolor mix or red quinoa
3 cups water
1 cup diced rhubarb
1 cup diced strawberries

Directions:
Place the quinoa, water and rhubarb in a small sauce pan. Simmer for 30 minutes, stirring occasionally. Stir in the strawberries and simmer for 5 additional minutes. Serve immediately.

My thoughts:

I’m always on the look out for new things to make for breakfast. Honestly, I’m not the biggest quinoa fan in most situation but when turned into a creamy, fruity porriage I can get on board. It is a fun change from oatmeal in the morning.

  2. I'm not sure how many servings this is. For the eating plan I'm on I'd have to make it be two servings. This porridge sounds wonderful – so I'm hoping I can persuade my husband to try it.
