
Jimmy Truffles
The best chocolate truffles rolled in chocolate sprinkles.
Ingredients
- 8 oz 70% dark chocolate, finely chopped
- 8 oz 55% dark chocolate, finely chopped
- 16 oz heavy cream
- 2 tablespoons butter
- 1 teaspoon vanilla
- 10 oz chocolate sprinkles
Instructions
- Place the chocolate in a heat proof bowl. Set aside.
- In medium saucepan, bring the cream, butter and vanilla almost to a boil—the cream should be hot and a few bubbles should be present around the edges of the pan.
- Pour over the chocolate and whisk until the chocolate is fully melted and the mixture is smooth. Whisk through a mesh strainer into a bowl and refrigerate for one hour.
- Pour the sprinkles in a shallow bowl
- Scoop the batter into 2 teaspoons sized balls and roll in sprinkles to evenly coat. Place on a platter and repeat for remaining truffles.
- Store leftover truffles in a cool place or in the refrigerator.
If you are in Baltimore and haven’t had Rheb’s candies yet, you need to fix that! It’s an old fashioned chocolate shop that’s been making handmade candies for over a hundred years. It is traditional in my family to get a customized box for every holiday and birthday. Everyone has their own favorites but one real classic is Rheb’s Jimmy Trufffles. My aunt used to get a two pound box of just these truffles for Christmas every year!
They are basically a simple chocolate truffle rolled in chocolate sprinkles but they are so creamy and good. Since everything is horrible and Rheb’s is all the way across town, I thought this might be the year to try to make my own.
I can’t say these are an exact dupe but they come close. The trick is adding a little butter to the mixture (maybe I’m making it up but I swear it makes them set up better) and using two different chocolates to get the extract right blend. Fussy fussy I know but using just 70% or just 55% wasn’t quite right. Trust me.
Chocolate sprinkles can be a little tricky to find in larger quantities and you need a lot of them for this recipe. Don’t skimp out. Those little tiny spice bottle sized containers won’t cut it.
I’ve had good luck at supermarkets with large baking departments. Good old Betty Crocker will come through for you. Don’t be tempted by rainbow sprinkles either. They won’t be quite right.
