Lox-Cucumber Egg Salad

Smoky lox and paprika are brightened up with the crunch of cucumber. 


  • 6 hard-boiled eggs
  • 1/4 cup finely diced red onion
  • 1 "baby" cucumber small dice
  • 1/4-1/3 cup diced sliced lox
  • 1/4 cup mayonnaise
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon ground mustard
  • freshly ground black pepper
  • pinch celery seed


  • Slice eggs in half and remove the yolks. Place the yolks in a small bowl. Set aside.
  • Chop up the egg whites. Place in a medium-sized bowl. Stir in the onion, cucumber and lox.
  • Place the mayonnaise and spices in the small bowl with the yolks. Mash with a fork until smooth. Pour over the chopped egg mixture.
  • Stir to combine.

I’ve made egg salad similar to this a few times over the years and I truly thought I had posted a recipe for it. Apparently not! It’s really one of my favorite deviled egg recipes in egg salad form with a little tweak to the spices. I like to get lox and smoked salmon at Costco where the price doesn’t quite take my breath away the way it does in other places so I feel like I can be a little liberal with my use of it and not save it for some nicer occasion.

Chopped up the lox really distributes nicely in the egg so every bite has a bit. It doesn’t add a ton of texture contrast but it sort of melts into the yolk which I’ve found I like quite a bit. It’s a fun way to use up leftover lox or hard boiled eggs.
