Anchovy Spiked Egg Salad

Can the world handle another egg salad recipe? I think so.


  • 6 hard-boiled eggs
  • 1 1/2 tablespoons anchovy paste
  • 2 tablespoons finely chopped mixed olives in olive oil
  • Freshly ground black pepper
  • 3 tablespoons mayonnaise garlic mayo if you have it or add in a tiny sprinkle of good quality granulated garlic
  • 1/4 small red onion finely chopped
  • 1/4 loose cut coarsely chopped flat leaf parsley


  • Pop out the yolks and place them in small bowl. Mash them with a fork. Mash in the anchovy paste, olives, mayonnaise until fairly smooth.
  • Chop the whites and toss them with the parsley in a medium bowl. Add the yolk mixture and stir to evenly distribute.

This is sort of an Americanized version of the gubbröra (Swedish egg salad) I made years ago. I think egg salad can be bland if you aren’t careful and in this version, I eliminated that chance by adding some anchovy paste. If you don’t have a tube of the paste, you could mash a filet in the mayo and get a similar result, the paste is simply smoother and easier.
