Ingredients

  • 1 1/4 cups flour
  • 1 1/4 cups rolled oats
  • 1/4 cup turbinado sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon ground allspice
  • 1 teaspoon ground ginger
  • 3/4 cup butter, melted and cooled slightly
  • 2 teaspoons vanilla extract
  • 1 1/3 cup jam or preserves I used black currant preserves
  • 2/3 cup sweetened shredded coconut

Instructions

  • Preheat oven to 350.
  • In a large bowl stir together the flour, oats, sugar, baking powder, and spices until evenly distributed. Stir together the melted butter and vanilla and drizzle it over the oat mixture. Stir until the mix is moistened and crumbly.
  • Remove one cup of the mixture and set aside.
  • Sprinkle the mixture evenly into an ungreased 13 x 9 baking pan and gently press down. Spoon the jam or preserves over the mixture in an even layer.
  • Sprinkle the reserved mixture evenly over the fruit spread.
  • Bake for 40 minutes or until lightly golden. Cool in pan on a wire rack. Slice into squares.

Notes

  • You can make a small batch of homemade jam for this recipe, put some aside when making jam (before canning it)  to make these. I have a lot of small-batch jam recipes that would work perfectly! Or just used prepared jam.
  • For extra credit, lightly toast the oats in a skillet and let them cool before adding them to the bars.
  • If you want to freeze them, cut them into squares first and freeze in a single layer on a baking sheet (or like I did, just in a plastic bag placed on the back of a frozen food box)  and then put them in a container. Or keep them in the bag. We don't all have a ton of freezer space.
