I’ve always burned pinenuts when I do them in the oven. I need to SEE what is going on. So, I’ve taken to dry-roasting them in a pan on top of the stove. Non-stick pans are good, but others have worked too cuz the nuts have so much oil inside. Keep your eye on it– the nuts take ahwile to start to cook, then they’ll burn fast if you’re not watching them. Keep moving them around with a spoon or spatula.
Thanks for the tip, I can’t wait to try this. I have burned many a pine nut stove top.
