Ingredients:
1 1/2 cup confectioners’ sugar
4 oz cream cheese, at room temperature
1 1/2 tablespoons dutch process cocoa
1 tablespoon good rum

Directions:
In a large bowl, mix together all ingredients until smooth. Use to frost cool cupcakes or cake.
My thoughts:
Chocolate and rum are a great pair and the cream cheese keeps it from being too sweet. Excellent on Cubra Libre cupcakes.

ohhh, yum! i love that flavor…cuba libre! the actual drink kicks up my asthma, but these may have only positive effects! o.k., maybe one negative…the waistline!

seeing that lime on the cupcake confused me at first. i immediately craved a margarita but realized there was chocolate there as well. then when i read the recipe name of Chocolate Rum Cream Cheese Frosting, i fell in love. The lime is such a great accent. Very original.
I tried this yesterday–tastes great, but my frosting came out a little liquidy for my tastes–will try again with more sugar–or perhaps a bit of meringue powder will give it more body? Thanks for sharing it.
I made this tonight on a plain chocolate cake. Fantastic!
