Just a quick note: I was interviewed for an article about marshmallows last month and it appeared in the Baltimore Sun food section today. Read the online version here. Good for you!!! What a great article! Enjoyed the document on making marshmallows also. I started making my own marshmallows last year, will never buy them again. No comparision. Will give the green tea version a try, sounds interesting.
I just read the article and had to come online to tell you that it was great to read about you. I would have never thought to make my own marshmallows either. This might be a fun spring break project to do with the kids.

I really enjoyed the article, Rachel, and I love the picture of you holding the plate of marshmallows. You know, my mother-in-law made home-made marshmallows for Easter last year and sent them to us in a care package. My husband has been raving about them for the last 11 months, so I hope we another little package soon! If not, I feel secure knowing I can follow your recipe.

Congratulations! What a wonderful article. And I’ve been thinking about marshmallows lately–specifically, figuring out if it’s possible to make them sugar-free, or at least lower glycemic-index. I know, it’s blasphemy… but when you’re diabetic, you have to do what you have to do!
