Super Deluxe Pizza Sauce
Ingredients:
1 small onion, minced
4 cloves garlic, minced
4 anchovy filets, minced
4 oz mushrooms, diced
1/4 cup olive oil
24 oz (can) peeled, whole plum tomatoes, cut up
Directions:
In a large saucepan, saute the onions, mushrooms, garlic and anchovies, in olive oil, 5 minutes or until fragrant. Add tomatoes and stir. Cook 30-40 minutes or until thickened, salt and pepper to taste.
My thoughts:
This is a really, really tasty sauce. The anchovies just melt and add a nice depth to the flavor. It’s a little bit time consuming, but if you are making your own pizza dough anyway, you have plenty of down time while you’re waiting for it to rise.
Leftovers would be great on pasta.
I would also add a bit of sugar, according to taste, for the sourness of the tomato. That’s something my mother taught me, when making a tomato based sauce, it’s always good to add a bit of sugar to balance the flavours.
I make something almost identical, but I add a bay leaf after adding the tomatos. I think it really makes the sauce perfect.
I realize this is a really old post, but commenting on the first comment. I prefer to add baking soda to tomato sauce. It neutralizes the acid in the tomatos without sweetening the sauce. I (myself included) have had tomato sauces where people when got a little too zealous with the sugar. I prefer this method alot more. Plus the sauce foams up for a second (keep stirring until it has calmed down) and makes me feel like a mad scientist.
