Chocolate Coconut Brownies

1 1/2 cup flour
1 cup applesauce
1 cup dark brown sugar
2/3 cup cocoa
1/2 cup shredded coconut
1/4 cup oil
2 teaspoons vanilla
1 teaspoon baking soda
2 teaspoons baking powder

Preheat oven to 350. Grease and flour or spray an 8×8 inch baking dish. In a large bowl, beat together applesauce, oil, sugar and vanilla. Stir in flour, baking soda, baking powder and cocoa. Beat until well mixed then fold in coconut. Pour into prepared pan. Bake 25 minutes or until a toothpick inserted into the middle of pan comes out clean.

My thoughts:

My sister-in-law is spending the weekend with us before she heads back to India. She isn’t technically vegan (she’ll eat honey and cheese if it is rennet free) but she doesn’t eat eggs. We have a friend who is vegan so we invited them over to meet my sister-in-law and to share these delicious vegan brownies. I had never made vegan brownies before, but they were good: slightly chewy and with a good chocolate favor.

  1. I wish I had seen this earlier. I didn’t have eggs but all the other stuff. Looks good.

  2. Coconut and brownies…why haven’t I thought of this one before?? All you need is mint and you’ve got a really incredible treat 😉

  3. Excellent!
And you didn’t forget about them in the oven like I did…

  4. Never tried brownies with coconut before… sounds like a delightful combination!

  5. Oh yum!! Now if I can only find which box my cocoa powder is packed in I’ll be all set to try them 🙂

  6. What a great recipe! They look so moist and I love the addition of coconut.

  7. I’ve never tried coconut or vegan brownies before, I’m pretty in love with the Hershey’s Best Brownie recipe as featured on the back of the cocoa canister. Inspired by your chocolate cupcakes, with peppermint frosting, I am planning on creating some chocolate peppermint brownies, with bits of crushed candy canes in them.

  8. Chocolate and coconut – brilliant! They look supergood.

  9. Coconut and chocolate sounds like a very nice combination.

  10. I’ve tried chocolate and coconut in cupcakes before, but never brownies. Sounds like a delicious combo!
