Fresh Radish Relish

Ingredients:
6 small red radishes or 3 large red radishes, small dice
1 stalk celery, small dice
1 shallot, minced
1 cubanelle pepper, minced

dressing:
3 tablespoons apple cider vinegar
1 teaspoon yellow mustard seed
1/8 teaspoon celery seed
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon sugar

Directions:
Whisk together the dressing ingredients in a small bowl. Place the remaining ingredients in a medium bowl. Drizzle with dressing and toss to evenly distribute. Allow to sit 20 minutes before serving.

My thoughts:

I am generally a sauerkraut and/or mustard girl when it comes to hot dogs but for some reason the idea of a radish relish (which I had never even heard of before) stuck in my head. As it turns out, it was really good. I had it on a bison hot dog and enjoyed the pickley, spicy, zippy bit of crunch it provided.

I also think this relish would be great on grilled fish or even chicken. It is just so fresh tasting and crisp, it really brightens up whatever it is put on.

    This is something different and which I may try because like you I'm a fan of mustard and pickles in my hotdog.

  2. Your recipe looks delicious,and I can't wait to try it. For some reason, I keep forgetting about radishes even though I love them. My grandmother used to make a wilted lettuce salad that had cooked radishes in it that she just loved. Thanks for the memory jog. I will definitely be picking up some radishes on my next trip to the grocery store.

    I love that it's pinkish. I rarely eat radishes any way than with salt or dip. This is a nice change.

  6. I think this is a great idea. I love the peppery bite of radishes, and the tangy dressing and crunch of celery would pair wonderfully. It could be great, also, with apples tossed in and to top bratwurst.

  12. Made this last night with a couple of substitutions (carrots instead of celery and mustard powder instead of seeds) and put it on a quesadilla — gave the dish great crunch!

  13. I made this with just a few substitutions (purple scallions for shallots, a little jalapeno and lemon juice) and had a lot of fun using it over the last week. First I took it to a cookout, where it was a great substitute for salsa on chicken and carnitas tacos. Then, on lazy cooking nights I had it a couple of times this week on hot dogs. Finally, today I used a bunch of it to make up a phenomenal batch of tuna salad for tuna melts. Stayed great and fresh-tasting all week, and I especially liked how it got more and more pink over time.

    Thanks for the recipes! I also just finished an instant smoothie made with your Strawberry-Rhubarb Compote and drinkable honey yogurt. Delicious.
