Jam Dotted Shortbread Cookies

Jam Dotted Shortbread Cookies

6 oz butter, at room temperature
1 cup sugar
1 egg, at room temperature
2 cups flour
1/2 teaspoon baking powder
good quality jam

Preheat the oven to 350. Grease a cookie sheet (or two if small) with butter. Cream together butter and sugar. Add egg and beat until smooth. Add baking powder and flour, mix to form a thick dough. Roll into small 1 1/2 inch balls. Place 1 inch apart on greased cookie sheet. With your spoon or a fingertip, make a shallow dent in the top of each cookie. Fill with a tiny bit of jam. Bake 10 minutes or until lightly browned. Allow to cool on wire racks.

  1. Oh! I think I have the ingredients for this (usually I always have to go out and buy something!) I’m going to try this. Thanks for the recipe.

  2. I LOVE your blog, will be adding you to my blogroll πŸ™‚ Great recipes!!

  3. Hey thanks for visiting my blog. I’m a teacher too. It seems there are quite a few teacher/blogger types out there.

  4. Shortbread is a favorite of mine! Oh so good with hot chocolate! Nice choice for the swap.

  5. These cookies look like the ones my granny made every year. I was looking for that kind of receipe a long time and today I tried one, that sounded similar but it doesn’t fit. I will try yours next time.

  6. I just made these, and they’re AMAZING. They turned out perfectly. Thanks for the recipe! πŸ™‚

  7. Erica! I am glad you enjoyed them. I love them too.

  8. Hi,

Nice recipe πŸ™‚ I think I’ll try this today, could you please tell me what’s the shelf-life of this cookie?

  9. Not sure of the “shelf life” we ate (or gave them away) rather quickly. I’d say a few days?

  10. I made these along with a few other desserts (including your blueberry cranberry bread) for Thanksgiving to take to my brother's place. They were amazing (both of them!!!) I think I was able to grab one cookie and an edge of the bread before everyone took them apart. Your blog is wonderful! Do you have any new holiday recipes that would travel well coming soon?
